Chicken Salad with Grapes and ApplesChicken Salad is a light, tasty meal that’s good for you, any time of year, for lunch or dinner.  Especially when you’re too tired to cook or pressed for time, or just want to take a break from slaving away in a hot kitchen. Not to mention, it’s simple to make!  Great chicken salad doesn’t require a complicated recipe, fancy equipment, or precise measurements. Just add or omit ingredients to suit your taste.

Best of all, you can make chicken salad without turning on the stove. Use leftover grilled chicken, rotisserie chicken from the deli, or canned white meat chicken. If using a deli chicken, be sure to discard bone and skin, and use the breast meat only.

First, shred the chicken or cut it into bite-size pieces. Next, add any or all of the following ingredients: green or red seedless grapes, halved; cubes of apple, any type; chopped walnuts, pecans, or the nut of your choice; and light mayonnaise to taste. Gently mix the ingredients, and you’re done!

Enjoy chicken salad by itself, or have it on a wholegrain pita or a slice of wholegrain bread for lunch. Or dress it up for dinner by serving it in scoops on a bed of greens. Matched with a tall glass of iced tea with lemon, it makes a meal that’s good enough to share with guests.

Chicken salad is not only easy to prepare, but it’s also good for you. It’s a great source of lean protein, and the fruit and nuts you add make it even more nutritious.
